Knead & Prove
Last week I spent the loveliest morning with Rachael and Laura from Knead & Prove. It was so interesting to learn a little bit more about their daily bread making routine.
Rachael and Laura launched Knead & Prove early this year but you may know Rachael previously from The Frothy Whisk. Together they make the most amazing sourdough loaves using a basic but very successful recipe of salt, water an flour.
From the moment I stepped into their very warm bakery I knew there was something special about these two! The atmosphere was relaxed but hard work was being put in. They both had a full day of shaping and baking ahead of their weekend of local markets.
Knead and Prove is based in Bangor and from their bakery they complete orders of bread for a number of local coffee shops in Northern Ireland including The Guillemot in Bangor and Cafe Cuan Belfast.
They have a huge passion for what they do and love supporting local by trying to use local ingredients and by stocking these great local spots.
I am a sucker for business that offer a small menu but do it so well! These guys are no different. They are definitely a quality over quantity type of business that offer a handful of flavoured loaves and do so at the highest quality. I am always trying to get my hands on their Garlic and Tomato Sourdough Loaf.
You can pick up a Knead & Prove Loaf at The Drawing Room in Bangor or if you order a few days in advance you can collect from their bakery in Balloo.
They also sell fresh loaves at a number of local markets.. Keep a lookout on their socials to see when their next upcoming markets are.
If your close any of the markets.. GO and support local makers and have a chat with Rachael and Laura, they are so friendly and always happy to talk about their bread and answer and questions you might have!
I am a real sourdough convert and it is thanks to these guys… As someone who has a slight intolerance to bread I find sourdough so much easier to eat due to its simple ingredients. Knead & Prove put a lot of time and effort into each loaf to provide a fresh and tasty outcome. I definitely recommend a grilled cheese sandwich with their Garlic and Tomato loaf... Its hard to beat!
